I know some of my flist likes to make things from scratch. Has anyone made Jeni's Ice Cream from scratch?
I know the recipes in her James Beard award winning book aren't exactly the same as what she makes for her shops. But I've never had Crohn's flareups on her ice cream so I want to use her recipes.
I'm having an issue with the cream cheese and can't quite figure it out. The first time I let it sit out for 8 hours and ended up with big chunks in the ice cream. The second time I let it sit out for a day and a half. And I switched from a twirl whisk to a small piano whisk. They are now cream cheese flecks instead of chunks in the ice cream. I'm getting closer.
